Chef Levi Kensey’s culinary journey is deeply rooted in his great-grandmother Rose’s legacy. A descendant of the Maroons, Rose embodied the traditions of the Portland Parish, where the renowned jerk technique was developed. During his visits to her home, she taught him the art of fresh gardening, the importance of quality ingredients, and how the mountains could truly harvest life. Inspired by her wisdom, Levi promised to make her proud.
After attending culinary school and traveling the world to refine his craft, he returned to the United States, playing a pivotal role in opening several popular restaurants and sharing his expertise with diverse audiences. Today, he honors his great-grandmother’s influence through Roseate—a restaurant dedicated to cooking with love, passion, and the freshest ingredients. Every dish reflects the traditions and flavors that shaped his upbringing, ensuring that Rose’s legacy lives on in every bite.
